Ingredients (for 2 persons)

• 300 g chicken thighs (cubed or stripped)
• 2 tbsp Madame Ginger Jeanette Sambal
• 1 tbsp soy sauce (light or ketjap manis)
• 1 tbsp honey or palm sugar
• 1 tsp rice vinegar or lime juice
• 1 clove garlic (grated)
• 1 tbsp sunflower oil

Optional: spring onion, sesame seeds or fresh coriander for the finishing touch

Preparation method

1. Marinate the chicken with 1 tablespoon of sambal , garlic, and soy sauce. Let it marinate for 15–30 minutes.
2. Heat the oil in a frying pan or wok. Fry the chicken until golden brown, about 5–6 minutes.
3. Add the remaining sambal, along with the honey and rice vinegar.
4. Simmer gently for another 2–3 minutes until the sauce becomes thick and sticky.
5. Serve immediately with white rice or noodles. Garnish with scallions or sesame seeds.

This dish deserves good company. Pair it with, for example:

• Stir-fried sugar snaps or bok choy with garlic
