Ingredients (4 persons)
- 500 g large shrimps, peeled and cleaned
- 2–3 tbsp Mr. Scoville Drop The Lemon Sambal
- 2 tbsp olive oil or sunflower oil
- 2 cloves garlic, finely chopped
- 1 red onion, thinly sliced into half rings
- 1 red bell pepper, cut into strips
- 150 g sugar snaps (or green beans)
- Juice and zest of ½ lemon
- 1 tbsp light soy sauce
- Salt & freshly ground pepper to taste
- Fresh coriander or parsley, finely chopped
To serve with: steamed white rice, noodles or fresh baguette
Preparation method
- Prepare the shrimp: Pat the shrimp dry and toss with 1 tablespoon of oil, 1 tablespoon of Drop the Lemon Sambal, and a pinch of salt. Marinate for about 15 minutes.
- Stir-fry vegetables: Heat 1 tablespoon of oil in a wok or frying pan. Briefly sauté the onion and garlic. Add the bell pepper and sugar snap peas and stir-fry for 3–4 minutes until tender. Remove from the pan and set aside.
- Shrimp fry: In the same pan: fry the shrimp over high heat for 1–2 minutes per side, until just cooked through and nicely pink.
- Bring everything together: Return the vegetables to the pan. Stir in 1–2 tablespoons of Drop The Lemon Sambal, along with the soy sauce, lemon juice, and lemon zest. Taste and season with pepper and, if desired, more sambal.
- Serving: Spoon the shrimp and vegetables into a bowl, garnish with cilantro/parsley, and serve immediately with rice, noodles, or bread to mop up the sauce.
